ingredients
seasoned pork mince
- ½ tbsp neutral oil
- 100g pork mince
- 1 tsp ginger, grated
- 1 garlic clove, minced
- ½ tsp sugar
- 1 tsp oyster sauce
- 1 tsp chilli oil
- 1 tsp light soy sauce
- ½ tsp dark soy sauce
for the soup base
- 1 egg yolk
- 1 Samyang Buldak Rosé seasoning packet
- 1 Samyang Buldak Rosé sauce packet
- 1 tbsp Kewpie mayonnaise
- 1 cup reserved noodle water
for topping
- Spring onion greens, thinly sliced
- Mayak marinated egg (recipe here)
- Sesame seeds
- Chilli oil, optional
method
1.Cook the Pork Mince
Heat the oil in a frying pan over medium-high heat. Add the pork mince and leave it undisturbed for 3 minutes to develop some colour on the bottom.
Break up the mince and continue cooking for another 3–5 minutes, or until fully cooked and it's no longer pink.
2. Season the Mince
Add the ginger, garlic, sugar, oyster sauce, chilli oil, light soy sauce, and dark soy sauce to the pan.
Mix well until the seasonings are evenly distributed through the meat. Taste and adjust to your preference if needed.
3. Cook the Noodles
To save on time, while you're cooking the mince, bring a pot of water to a boil and cook the instant noodles according to the packet instructions.
Before draining, reserve 1 cup of the noodle cooking water.
4. Make the Broth
In a serving bowl, combine the egg yolk, Buldak Rosé seasoning packet, Buldak sauce packet, and Kewpie mayonnaise. Then whisk everything until smooth.
Slowly pour in the reserved noodle water while continuously stirring to create a silky, creamy broth; add more or less water depending on how soupy you'd like your broth.
5. Assemble
Add the cooked noodles to the broth and toss gently to coat.
Top with the seasoned pork mince, sliced spring onion greens, and a halved Mayak marinated egg.
Finish with a sprinkle of sesame seeds and a drizzle of chilli oil if you'd like some extra heat.
notes
- For a richer broth, use slightly less noodle water.
- Add extra vegetables such as pak choi, spinach, or bean sprouts for some greens!
- The Mayak marinated egg adds an extra layer of savoury umami flavour and I definitely recommend.
